Step into a moment of calm and tradition with a Japanese Tea Ceremony (Chanoyu)—a peaceful, sensory experience that welcomes the start of spring, presented in the Omotesenke tradition of tea ceremony in the Tatami room. Led by Junichi Ishii-sensei, this guided session highlights the core values of the tea ceremony: harmony, respect, purity, and tranquility.
Guests will experience the careful preparation and presentation of matcha (powdered green tea), engaging the senses through sight, smell, taste, and touch. Held alongside a beautiful display of Hinamatsuri dolls (ornamental dolls celebrating Girls’ Day), the setting, utensils, and elegant movements of the practitioners create a serene atmosphere that encourages reflection and connection.
Whether you’re new to Japanese culture or looking for a mindful seasonal activity, this is a chance to taste Japanese tea and sweets and learn about the tea ceremony.

Guided by Chef Javier Blanc, winner of Second Best Paella in the World at the prestigious Concurs Internacional de Paella Valenciana de Sueca, this hands-on masterclass explores both Seafood Paella and traditional Valencian Paella. Guests will cook alongside the chef while learning the fundamentals of paella-making, including ingredients, timing, and technique.
Throughout the class, participants will enjoy a selection of Spanish tapas and be introduced to the art of making sangria, adding another essential element of Spanish culinary culture to the experience.

Executive Chef Matteo Fontana grew up in Italy’s Veneto region, learning regional cooking traditions at home with his mother and grandmother. After working in kitchens across Veneto, Trentino-Alto Adige, and Emilia-Romagna, he moved to Vancouver nearly 15 years ago and rose through the ranks at Italian Kitchen to become Executive Chef. His cooking honours Italian tradition while thoughtfully incorporating fresh, seasonal Pacific Northwest ingredients. “I love how cooking brings people together,” says Matteo. “Vancouver offers incredible access to fresh, seasonal ingredients, and I enjoy incorporating Pacific Northwest influences in ways that honour the Italian traditions I hold close.”

Guided step by step, you’ll discover the secrets behind crafting beautifully balanced truffles—from mixing and shaping to finishing touches. This beginner-friendly class introduces the history, ingredients, and essential techniques behind Sakura mochi, one of Japan’s most beloved seasonal confections (commonly called 和菓子 wagashi).
Participants will learn to make two distinct styles of Sakura mochi. The workshop covers the classic Kansai-style mochi, known for its soft, chewy texture, as well as a wheat-free Kanto-style crepe version, offering a lighter and approachable alternative. Through step-by-step instruction, you’ll gain insight into regional differences while developing practical skills you can use at home.
All ingredients and tools are provided, allowing you to focus fully on the experience.
